Spicy Potato Curry
Spices are freshly roasted and powdered. Half cooked potatoes are again cooked with fresh masala, so it turns aromatic and yummy.
This will be nice as a side dish for all variety rice, Parrpu, Sambar, Keerai, Rasam, Curd Rice.
This measures will be enough for 4,5 person.
Potato – 3 large
Small Onions – 20
Garlic cloves – 6
Green chilly – 1
Curry leaves, turmeric powder, hing, salt, oil.
Coriander seeds – 3 tsp
Red chilli – 3
Pepper, jeera, fennel seeds – 1 tsp each
Cinnamon – 3 “inch
Cloves – 4
Coconut – 1 tsp
Ginger, garlic paste – 1/2 tsp
Cut potato, cook along with water for 1 whisle. It should be half cooked. Remove the skin and cut into cubes as shown.
Dry roast all spices, add Curry leaves, ginger garlic paste, coconut and grind to a paste.
In oil fry Curry leaves, green chilli, garlic, onion and fry for 3,4 minutes. Add grinded masala, turmeric powder, hing, salt little water and allow it to boil.
Add potatoes, mix add 3/4 cup water, close and cook in medium flame for 5,6 minutes.
Open, check for salt, check whether it is cooked well. Add a tsp of oil cook in high flame for 2, 3 minutes, add Curry leaves, mix and switch off.
