To make a perfect juicy laddu,.. It will be juicy still a week.. Follow the measurements and tips..
Use the same cup for all measurings
Gram flour – 1 cup ( 100 gm)
Sugar – 1 cup (200 gm)
Water for sugar syrup – 1/2 cup (100 ml)
Rice flour – 1/2 tsp
Cooking soda – 1 pinch
Oil for deep frying
Cashews, Dry grapes, cardamom powder, nutmeg Powder, ghee.
Keep oil in low flame for deep frying. Mix sugar, water, Boil it until one string consistency.
Mix gram flour, Rice flour, cooking soda with water, make it as a flowing dosa batter consistency as shown. Make sure no lumps. Make bondhi as shown. Cook in medium flame for few minutes. It should be 80% cooked. Take out, immediately add to hot sugar syrup. Mix well remove from sugar syrup, stain, put in a deep vessel. Make next batch, repeat the same.
Fry Cashews, Dry grapes in oil add it. Add 1/4 tsp cardamom powder, 2 pinch nutmeg powder, mix well. Press it tightly, close, keep a weight over it, keep aside for 30 minutes. It should be dum, to give softness.
Open, add 1 tsp ghee. Mix well, make laddu as shown. Make sure your hand is dry.
You will get 12 to 15 laddu for this measuring.
Use nice new branded gram flour ( Nandhi or Sankar brands are good)
Use same cup for all measuring.
Cook bondhi only 2,3 minutes, it should be cooked only 80%.
Oil should be well stained before adding to syrup.
Make sugar syrup just before frying bondhi.. It should be hot.
Take out bondhi immediately add to syrup, mix and remove at once.
Keeping dum is a main process for getting juicy soft laddu.
