Five or six vegetables saute in coconut oil, and cooked along salt, turmeric powder, added coconut grinded along jeera, green chilly, curry leaves. Also added little curd,. sautéed using coconut oil.
Aviyal is very famous in kerala and also in some part of Tamil Nadu. This can be served as a side dish along meals ( thick consistency) or for Adai dosa ( diluted consistency)
Drumstick – 1 : Brinjal – 4 :
potato – 1 : Raw Mango – 1/4 :
Yam – 1/8 : Carrot – 1/2 :
Cluster beans – 10
( you can change vegetables as per your choice)
Coconut – 8 tbs
Jeera – 1 tsp
Green chilly – 3 to 4
Curry leaves, salt, turmeric powder, coconut oil, mustard seeds, Ulund dhal.
Chop vegetables as shown. In a tsp of coconut oil, fry vegetables for a minute. Add little turmeric powder, salt and a cup of water. Cook for 1 whistle.
After 3 minutes, take off the steam. Grind coconut, jeera, green chilly, few curry leaves to a course powder. Take out half of the coconut out and add some water to the rest, grind it to a smooth paste.
Divide the cooked vegetables into two. Add the course coconut powder to one part of the cooked vegetables and cook for a minute. Add 2 tbs curd ( if you don’t add raw mango, you can add 4 tbs curd). Cook for a minute and switch off.
Add the smooth coconut paste to the other part of the cooked vegetables and add a little water and salt. Cook for 2 minutes. Add 2 tbs curd and cook for a minute. Switch off.
In a tsp of coconut oil, fry mustard seeds, ulund dhal , curry leaves and add it to the Avial. Add little more coconut oil on the top.
