Beetroot Rice :
Cooked rice is sautéed along graded beetroot, onion, curry leaves, ginger garlic paste with mild spices and salt, and added fresh coconut, coriander leaves. Topped with golden fried cashews.
It will be good choice for lunch box and it will be also nice choice for parties and get togethers.
Kids will like the colour of the recipe and moms will like the health benefits and simple method of cooking.
Cooked rice – 2 cups
Beetroot – 1 cup graded
Onion – 1/2
Coconut – 4 tbs
Cashew – 4
Green chilly – 1
Red chilly powder – 1/2 tsp
Garam masala powder – 1/4 tsp
Turmeric powder – 1/8 tsp
Ginger garlic paste – 1/2 tsp
Salt, curry and Coriander leaves, mustard seeds, jeera, oil.
Cool down the cooked rice. In 3 tsp of oil fry cashews and keep aside. In the same oil fry mustard seeds, jeera and add chopped onion, split green chilly, curry leaves and fry it golden brown.
Add ginger garlic paste, graded beetroot, chilly powder, garam masala, turmeric powder and 1/4 tsp of salt and mix well.
Add 1/4 cup of water and stir, cook in medium flame for 3,4 minutes until water gets dry. Now you can remove green chilly.
Add coconut, cooked rice, little salt, Coriander leaves, cashews and mix. Cook for a minute and switch off.
