Bitter Gourd is a healthy vegetable. By following simple steps you can get a nice gravy with out bitterness.
Bitter Gourd – 250 gm
Small onions – 20
Garlic cloves – 10
Gingerly oil – 8 tsp
Tamarind – lemon size
Turmeric powder – 1/4 tsp
Kulambu powder – 3 tsp
Jaggery – 1 tsp
Rice flour – 1 tsp
Salt, curry leaves, asffotida, mustard seeds, thour dhal
Cut bitter gourd into slices, and put it in rice washed water, for 15 minutes.
Take out tamarind pulp.
In 2 tsp of oil fry bitter gourd, in medium flame, until it is cooked. It takes about 10 minutes.
In 4 tsp of oil fry, mustard seeds, thour dhal, asffotida, add onions, garlic and fry. Add tamarind pulp, all powders, and salt. Add some water and boil it for 5 minutes.
Add curry leaves to bitter gourd, mix well and add this to the gravy.
Add jaggery and allow it to boil for a minute.
Mix rice flour with some water, and add this to the gravy. Add little water according to the consistency.
Allow it to boil for a minute. Switch off and add a tsp of oil on the top.
