Carrot rice is a very simple recipe, suitable for lunch box. If cooked rice is ready, we can make this within 5 minutes.
Cooked rice – 150 Gm

Carrot – 2 (250 Gm)
Big onion – 1
Green chilly – 1
Red chilly – 1
Coconut – 2 tbs ( optional)
Turmeric powder, chilly powder, garam masala powder – 1/4 tsp each.
Salt, oil, mustard seeds, channa dhal, Ulund dhal, jeera, curry and Coriander leaves.
Cook rice and let it cool. Peel the carrot skin and grade it. In 4 tsp of oil fry mustard seeds, dhals, jeera, add chillies, onion, curry leaves and fry for 2,3 minutes.
Add carrots, turmeric, chilly powder and little salt, mix well, cook for 2 minutes in low flame.
Add coconut, Coriander leaves, garam masala powder and mix well, switch off, add cooked rice salt and mix well. Check the salt and add if needed.
Now colourful Carrot rice is ready for your kid’s lunch box. It will also very simple to make for your guests.
