Carrot Halwa is a delicious and healthy sweet. It can also be served as a desert after a meal. We can make it quick by using pressure cooker.
Ingredients
Carrot – 1/2 kg
(peel, cut carrot and grind them in mixi without adding water. Or you can grade it. Measure the grinded carrot.. Here it is 1cup )
Boiled Milk – 1 cup
Sugar – little less than 1/2 cup
Ghee – 4 tsp
Batham – 6
( soak in hot water and peel the skin and chop)
Pista – 8 chopped
Cardamom powder – 1/4 tsp
Steps
In a tsp of ghee, fry carrot for 3 minutes. Add milk, mix and cook for 1 whistle.
Open and cook for 4,5 minutes, until it gets little thick consistency.
Add sugar, and cook for 10 minutes, until it gets halwa consistency.
Add ghee, chopped nuts.

This is a restaurant style gravy with a different touch, by adding small onions, green chilly, pepper.. Makes this gravy more spicy and aromatic.
Ingredients
Mushroom – 200 gm
Chilly powder – 1/2 tsp
Turmeric powder – 1/4 tsp
Coriander powder – 2 tsp
Pepper powder – 1 tsp
Garam masala – 1/2 tsp
Salt, butter, oil
To grind
Big onion – 1
Small onions – 10
Tomato – 2
Green chilly – 2
Ginger, garlic paste – 1 tsp
Jeera – 1 tsp
Coriander leaves – 1 cup
Steps
In 2 tsp of oil fry onions for 2 minutes. Add tomatoes, green chilly, ginger, garlic paste and cook for 3 minutes, add Jeera, switch off and add Coriander leaves. Let it cool. Add little Wat and grind it to a smooth paste.
In 2 tsp of butter fry Mushroom for 3 minutes. Add grinded paste, all powders, except garam masala.
Add little Water, salt, close and cook for 5 minutes. Add garam masala, and cook in low flame for 2 minutes. Switch off and add a tsp of butter.

Amla Curry Leaf Rice is very healthy food rich in iron and vitamin C. Good for diabetic peoples, women in pregnancy, and feeding times.. It is also good for hair growth.
Ingredients
Amla – 4 to 5
Curry leaves – 1 cup ( it should be tender)
Green chilly – 5
Red chilly – 2
Small onions – 6
Garlic cloves – 6
Jeera – 1 tsp
Rice – 1 cup ( 250 gm)
( cook and let it cool.. I used ponni pulungal rice)
Gingerly oil, mustard seeds, ulund dhal, gram dhal, asfotida, turmeric powder, salt.
Lemon juice – 1 tsp
Steps
Take out seeds from amla, and grind it in mixie, without adding water. Remove it and in same mixie put curry leaves, 3 green chilly, Jeera. Add very little water and grind it to a smooth paste.
In 5 tsp of oil, fry mustard seeds, dhals, asfoetida, add finely chopped onions, garlic, red chilly and green chilly, fry it for 2 minutes.
Add crushed amla and fry for 2 minutes, add grinded curry leaf paste, curry leaves and cook for 2 minutes.
Add little turmeric powder, salt and mix, cook in low flame for 2 minutes. Switch off and let it cool for 5 minutes.
Add cooked rice and mix gently. Adjust salt as per taste. Add lemon juice and mix well.
Tasty, healthy mixed rice is ready.

Ingredients
Egg – 3
Oil – 2 tsp
Ginger garlic paste – 1/4 tsp
Turmeric powder – 1/8 tsp
Pepper – 1/2 tsp
Curry Masala – 1/2 tsp
Coriander powder – 1tsp
Salt, curry leaves
Steps
Boil and cut eggs. In oil fry all powders, ginger garlic paste , curry leaves, add 1/2 cup of water, salt.
Add eggs and cook both sides as shown for few minutes..

Egg Gravy is suitable for Chappathi, Poori and also for rice.
Ingredients
Egg – 3..boiled
Onion – 3
Tomato – 3
Ginger garlic paste – 1 tsp
Green chilly – 2
Turmeric powder – 1/4 tsp
Coriander powder – 2 tsp
Chilly powder – 2 tsp
Garam Masala – 1/2 tsp
Salt, oil, curry and Coriander leaves
Steps
In a spoon of oil add pinch of salt and chilly powder, add boiled eggs and fry for 2 minutes
Take out the eggs, add 3 tsp of oil, fry jeera and fennel seeds, add chopped onions and fry until it is golden.
Add ginger garlic paste, green chilly, turmeric, Coriander, chilly powders and mix well.
Grind tomatoes in a mixi and add this, add some water, salt, close and cook for 5 minutes
Cut the eggs and add this to the gravy, add garam Masala, curry, Coriander leaves. Add water according to the consistency.
Close and cook for 2 minutes.
