Chettinad Chicken Gravy

Chettinad chicken recipes are very famous and tasty. Fresly powered spices gives excellent aroma to this dish. Here is the recipe of chettinad chicken curry with easy steps.

Ingredients:

Chicken – 1kg, big onion – 1,small onions – 15, tomato – 3, ginger garlic past – 2tsp, green chilly – 2, turmeric powder – 1/2 tsp, curry, coriander leaves, salt, gingelly oil.

To powder:

Coriander seeds – 3 tbs, pepper-1 tbs, red chilies-10, methi seeds – 1/4 spoon, cinnamon – 3, cloves – 6, cardamom – 3, star anise – 1, Marta bud – 2, bay leaf – 1, jeera – 1tsp, fennel seeds – 1tsp

Dry Roast all and grind to a fine powder.

In 5 spoons of oil Fry onions for 2 minutes and add ginger garlic paste. Fry for a minute, add tomatoes, cook until it gets mashed. Add green chilly, turmeric powder, chettinad chicken powder and salt. Fry until oil comes out. Add chicken and Fry for 5 minutes. Add 1/4 cup water, close and cook for 6 minutes. Add curry leaves, mix well and add the coriander leaves.

Chicken Chettinad curry is ready.

Simple Chicken Roast

A simple tasty chicken Roast Recipe

Ingredients:

Chicken – 1kg, ginger garlic paste-2 tsp, curd-50ml, tumeric powder-1/2 tsp, garam masala powder – 1tsp, pepper powder – 1tsp, chilly powder – 3 tsp, salt, lemon – 1.

Marinate all together and let it be for 1 hour.

Butter – 2tbs, big onion – 2

Fry onions in butter and add marinated chicken along masala. Cook for 3 minutes. Then close and cook for 10 minutes (don’t add water) in medium flame. Open and cook for 5 minutes, then turn over in between, until it becomes dry and roasted well.

Chicken Liver Pepper Fry

Chicken Liver Pepper Fry is a healthy ,tasty dish for non.veg lovers.Here is a easy method of this recipe.

Ingredients

Chicken liver – 250 gm,ginger garlic paste-1/2 spoon, big onion-1, green chilly-1,turmeric powder-1/8 spoon, chilly powder-1/4 spoon, curry masala powder-1/4 spoon, coriander powder-1spoon, pepper-1/4 spoon, salt, oil,, curry coriander leaves.

Steps

In 2 spoon oil fry onion, green chilly for a minute, add ginger garlic paste, mix and add all powders except pepper powder. Fry it for a minute, add chicken liver, cook for 2 minutes. Add salt, 3/4 cup water, close and cook for 10 minutes. Open and Add pepper powder ,curry leaves and fry for a minute. Once it becomes dry add coriander leaves

Chicken Pepper Gravy

Chicken pepper gravy, suits for plain rice, roti, idly,dosa, egg dosa. Fresh pepper powder and coconut milk gives a nice taste and aroma to this gravy

Ingredients

Chicken -3/4 kg, pepper- 4 teaspoon, jeera- 1 teaspoon, onion-3, tomato-3 , ginger garlic paste -1 1/2 teaspoon, turmeric powder- 1/2 spoon, coriander powder- 6 teaspoon, chilly powder- 1 teaspoon, coconut- 3 table spoon, milk- 1 cup, fennel seed- 1 spoon, cinnamon-3 , cardamom- 1, cloves- 6, oil, salt, curry leaves, coriander leaves.

Steps :

Powder pepper & jeera & marinate chicken using this powder for 1/2 hour. Take coconut milk. In 6 spoons oil, fry whole garam masala, onion for 2 mins. Add ginger garlic paste, tomato & all powders. Fry for 3 mins. Add marinated chicken, salt & cook for 3 mins. Add 2 cups of water. Once it boils, close & cook for 8 mins. Open, add milk, coconut milk. Cook in open lid for 6-7 mins, till the gravy gets a thick consistency. Add curry & coriander leaves.

Mutton Pepper Sukka

Mutton pepper fry ,made by freshly made pepper powder.Easy & tasty side dish for briyani, rasam, curd rice.

Ingredients

Mutton- 3/4 kg,ginger garlic paste-1 table spoon, mashed small onion-10, chopped small onion- 15,green chilly-2,chilly powder-1 teaspoon, coriander powder-1 tea spoon, turmeric powder,salt, oil, curry, coriander leaves.

To grind
pepper-1 tea spoon, fennel seeds- 1 tea spoon, jeera- 1/2 tea spoon, cinnamon- 3,cloves-5
Dry roast all and make it as a fine powder.

Add ginger garlic paste, onion paste,turmeric ,chilly,coriander powders,salt to mutton ,mix and keep in open lid for 3 minutes. Add a glass of hot water and cook for 8 to 10 whistel. In 4 spoons of oil fry onion, green chilly,add fresh powder ,cooked mutton along cooked water. Cook for 5 minutes in high flame. If u want a semi gravy, u can now take it off. If u want a dry sukka keep in low flame for 3 minutes ,until it become dry. Add curry leaves ,mix well, add coriander leaves.

A Spicy veg briyani made with mushroom suits for your weekends & special occasions.

Ingredients

Mushroom -200 gms,onion -1,tomato -1,jeera rice 1 1/2 cup,green chilly -3, bay leaf,cinnamon,clove seeds -2,coconut -2 table spoon,ginger garlic paste -1 table spoon,turmeric powder,chilly powder – 1 to 2 tea spoons,coriander powder -2 tea spoons, garam masala -1/4 tea spoon,oil,ghee,salt,mint,coriander leaves.

Steps

Wash & soak rice for 20 mts, wash & cut mushrooms,grind coconut & take – 1 glass of coconut milk.Grind green chilly,mint,coriander leaves,ginger,garlic paste,all the powders into a paste. In 5 spoons of oil fry bay leaf,cinnamon,cloves,mint,coriander leaves,onion, tomato,add grind masala,mushroom,1 spoon of ghee fry for 2 mts. Ad 1 glass of coconut milk,2 glasses of water & salt,once it boils add the rice mix well cook for 2 whistles.

Spicy South Indian style mushroom gravy suits for idly,dosai,chapathi,poori,rice,biriyani.­..

Ingredients :

Button mushroom- 100 g; Big onion- 1/2; Small onion-8; Tomato- 1;Ginger garlic paste- 1 teaspoon; Oil; salt; turmeric powder; non-veg kulambu powder- 6 tea spoons (or use chilly powder- 2 spoons; coriander powder- 5 spoons); coconut – 6 table spoon; Roasted gram- 2 spoons; Curry,coriander leaves.

Steps :

In 3 spoons of oil, fry onions,tomatoes,ginger garlic paste,mushroom. Add all powders,water,salt.Close & cook for 3 mins. Grind coconut & roasted gram into a fine paste& add to the gravy. Add curry leave & water. Allow it to boil for 3 mins. Add coriander leaves.

Hotel Chicken Gravy & Fry | பிச்சு போட்ட கோழி வறுவல்

Chef Gowri shows how to prepare Hotel Chicken gravy & Fry exclusively on Gowri Samayalarai. This suits for idli, dosa and parota. We call fry in Tamil as Pichupotta Fry.

Ingredients:

Chicken leg & chest pcs- 1 kg,oil,salt,mustard seeds,curry,coriander leaves,small onion -20 nos & big onion -1,tomato -1,ginger.garlic paste -2 spoons,turmeric powder 1/2 spoon, chilly,curry masala, powders -2 1/2 spoons each, coriander powder -4 spoons,coconut -6 table spoons,roasted gram -3 table spoons.

Steps:

In 8 spoons of oil fry mustard seeds,chopped onions, tomato, ginger garlic paste. Mash some small onions & add it. Add all powders, chicken & fry. Add 3 glasses of water, salt , allow to boil, cook for 2 to 3 whistles. Take out the chicken pcs for fry. Powder roasted gram add coconut, water grind coursely add this to the gravy, put curry leaves allow it to boil, add coriander leaves.

Steps for Chicken fry:

Split the chicken piece as shown, in 1 spoon of oil fry 1 chopped big onion, curry leaves, Add chicken pcs, salt & pepper &fry add a small cup of gravy & fry for 2 mins.
