Curd rice or thayir sadam is a South Indian dish made with cooked rice and curd / yogurt.
Ingredients:
Rice : 1/2 Cup
Water : 1 and a 1/2 cup
Boiled and Refrigerated milk : 250 ml
Curd : 2 Tbspn
For Sauteing:
Mustard
Gram Dhal
Ulund / urad dhal
Asafoetida
Curry leaves
Steps:
First wash and soak the rice in water for 1 hour. Then take 1 and a 1/2 cup of water in a cooker and add the soaked rice to it. Cook it for 3 whistles. Mash the rice well and add the refrigerated milk (Overnight refrigerated milk will have cream on the top, cream gives good taste to the curd rice). Mix it well and mash the rice well. Then add the curd to the rice and mix well.
Heat the oil in a sauteing pan and saute the mustard, gram dhal and urad dhal. Then add 2 pinch asafoetida, then add curry leaves. Later add the sauteed ingredients to the curd rice.
Now the curd rice is ready.
