Curry leaf is a most important ingredient in India, we use mostly in all recipes. It gives a excellent taste and aroma to the dish, and it is very rich in iron. Let us see how to make a tasty rice using fresh curry leaves.
Cooked rice – 2 cups (100 Gm)
Refer Gowri Samayalarai For how to cook rice
Fresh curry leaves – 1 cup
Gram, ulund, thour dhal – 1/2 tsp each
Coriander seeds, jeera – 1/2 tsp each
Pepper – 1/4 tsp
Red chilly – 3
Garlic cloves – 4
Gingerly oil – 4 tsp
Peanut – 1 tbs
Lemon juice – 1/2 tsp
Mustard seeds, ulund, gram dhal, hing.
Wash and dry curry leaves. Dry roast all dhals, Coriander seeds, pepper for a minute, add red chilly, jeera, garlic and roast for a minute.
Add curry leaves and again roast for 2 minutes. Put in a mixi jar and powder it, add very little water and grind to a smooth paste.
In oil fry mustard seeds, ulund, gram dhals, peanut, add hing, curry leaves, salt and cook for 2 minutes.
Add cooked rice, and mix gently. Check for salt and add if needed. Switch off and add lemon juice and again give a mix.
Adding lemon juice gives a good taste and the rice will be a iron and vitamin C rich dish.
It will be a healthy choice for lunch boxes.
