Pearl Millet, in Tamil known as kambu is a fiber rich millet which cools body, so suitable for summer. Let us see a cool curd rice using this kambu in Gowri Samayalarai.
Kambu – 1 small cup (50 Gm)
Water – 3, 1/2 cup
Curd – 250 ml
Oil, salt, small onions, ginger, mustard seeds, ulund dhal, gram dhal, hing, curry leaves.
Wash and soak kambu for 3 hours, or over night. Drain the water and grind coursly in mixi.
Boil 3 cups of water in cooker, add coursly grinded kambu, mix well with out any lumps. Cook for 2 minutes by stirring.
If needed add another 1/2 cup of water, close and cook for 5 whistles. Wait until the steam downs and open. Mix well and keep aside for 30 minutes, until it becomes warm.
In 1/2 tsp of oil fry mustard seeds, ulund dhal, gram dhal, ginger, curry leaves, hing and add it to the warm kambu rice.
Add salt, fresh curd and mix well. If you do and take it in lunch box, you can mix milk and curd.
Add finely chopped 6 small onions to it. This gives a nice taste and small onions cools the body.
