Kovai Kai is a healthy vegetable. You can do a chutney using this, which is suitable for rice.
Kovai Kai (Ivy Gourd) – 200 Gm
Small onions – 10
Garlic cloves – 6
Tomato – 1
Tamarind – 2 inch
Coconut – 3 tbs
Ulund, thour, gram dhals – 1 tsp each.
Coriander seeds, jeera – 1 tsp each
Pepper – 1/4 tsp
Red chilly – 5
Oil,curry Coriander leaves, salt, hing.
Cut kovai Kai into thin slices as shown. Fry it in 2 tsp of oil. Add little salt, close and cook in low flame for 5 minutes. Remove it and keep it aside.
In 2 tsp of oil fry all dhals, Coriander seeds, pepper, jeera, red chilly. Add onions, garlic and fry for a minute, add tomato, tamarind, fried kovai Kai. Add salt and cook for 5 minutes.
Add coconut, curry Coriander leaves, hing. Grind it to thick chutney by adding very little water.
