Ivy Gourd Masala,cooked along with onion, tomato is a tangy dish, it can be enjoyed along plain rice and as a side dish for rasam rice, curd rice.
Tips to select Kovai Kai.. Select dark green color. Light green and yellow color are all ripped. It should be hard, when you press it. If it is soft it will be ripped. If you chop, it should be white inside. If it is red it is not suitable for cooking.
Ivy Gourd – 1/4 kg
Onion – 2
Tomato – 2
Garlic cloves – 8
Chilly powder – 2 tsp
Coriander powder – 2 tsp
Turmeric powder – 1/4 tsp
Jaggery – 1 tsp
Salt, oil, curry and coriander leaves.
Clean and chop Ivy Gourd as shown. In 1/2 tsp of oil fry it for a minute, add turmeric powder, 1 tsp chilly powder, little salt. Add 1/2 cup water and cook for 2 whistles.
In 3 tsp of oil, fry jeera, add curry leaves, onions and fry for 2 minutes. Add garlic cloves, tomatoes, 1 tsp red chilly powder, Coriander powder and little salt.
Add water from cooked vegetable, and cook for 2 minutes. Add cooked vegetable, mix well and cook for 4 minutes in medium flame. Add jaggery.
Add curry and coriander leaves. Mix well and switch off.
