Sambar is a common recipe. Let us see how to make it using Ivy Gourd, in Tamil known as Kovai Kai.
Kovai Kai – 250 Gm
Thour dhal – 100 Gm
Small onions – 10
Tomato – 1
Tamarind – Amla size
Sambar powder – 3 tsp
Turmeric powder – 1/4 tsp
Gingerly oil, salt, mustard seeds, hing, curry and Coriander leaves.
Cook the thour dhal along with turmeric powder for 3,4 whistles. Mash it and keep the dhal and Dhal cooked water aside.
Take out the pulp from tamarind. Wash and cut the vegetable as shown.
In a tsp of oil, fry onions, add kovai Kai and fry for 2 minutes. Add tomato, Sambar powder, dhal cooked water and allow it to boil.
Add tamarind pulp, salt and cook for 3 whistles. Add mashed dhal and boil it for 2 minutes. Add a tsp of jaggery.
In 2 tsp of oil fry mustard seeds, hing, curry leaves and add it to the Sambar, add Coriander leaves and mix well.
Now healthy Ivy Gourd Sambar is ready.
