Lemon Rice And Chilli Garlic Potato Roast
Nice Combo suits for lunch as well as lunch box.
Rice – 1 cup (250 gm) Pulungal rice
Lemon 3 to 4
Small onion – 15
Green chilli – 2
Red chilli – 3
Roasted peanut – 2 tbs
Gingerly oil, mustard seeds, Ulundu Dhal, Gram Dhal, Hing, turmeric powder, salt, curry leaves, coriander leaves.
Wash and soak rice for 45 minutes. Boil 8 cups water, add rice, cook until 80 %. Drain the water, keep aside for 20 minutes until it cools down.
Chop onion, Green chilli finely. In oil fry mustard seeds, dhals, peanut, add red chilli, onion, Green chilli. Fry for few minutes. Add turmeric powder, Hing, curry leaves, coriander leaves, mix well, switch off.
Add cooked rice, salt, mix gently. Check for salt, add more, if needed. Delicious onion lemon rice is ready.
Chilli Garlic Potato Roast
Potato – 3 large
Red chilli – 10
Oil, turmeric powder/4 tsp, coriander powder 1 tsp, garam Masala powder1/4 tsp, Hing, salt, curry leaves, coriander leaves.
Soak red chilli, Garlic in hot water for 10 minutes. Stain the water, add tomato, grind to a smooth paste.
Cook potato for one whistle, peel the skin, cut into cubes.
In oil fry curry leaves, add grinded masala, all powders, cook for few minutes, until oil separates. Add potato, salt, mix well, add 1/2 cup water, cook for 5 minutes, in low flame. It is cooked and become dry, put in high flame and spread it, roast it both sides, by turning often. Add coriander leaves, mix, switch off. Delicious Potato Roast is ready.
