Very small size rice flour balls are steam cooked and sauteed.
We make many varieties of Kolukatai for Vinayaka Chaturthi Pooja. Here is a spicy Kara Kolukatai.If you do outer cover dove for purana Kolukatai, you can do this, using the leftover dove. You can get 2 cups of Kolukatai in this measures.
Raw Rice flour or Kolukatai flour – 1 cup scooped
Water – 1,1/4 cup ( same cup)
Salt, gingerly oil, hing, curry leaves, idly podi, coconut, mustard seeds, ulund dhal, gram dhal.
Dry roast the rice flour for just a minute,.. Color should not change. If you use Kolukatai flour, you don’t need to dry roast. Add 1/4 tsp of salt, little gingerly oil and mix well.
Boil the water, it should be bubbling. Add it to the flour and mix using a ladle. After few minutes, mix with hand to a soft dove. If you want you can sprinkle some hot water now.
Grease your hand with gingerly oil and make very small balls, as shown. It should be small as the size of Channa.
Grease the steam plate with oil and steam cook for 5 minutes.
In little oil fry mustard seeds, dhal, hing, green chilly, curry leaves, add steamed Kolukatai, 1/4 tsp salt, sprinkle some water and mix well for a minute. Add Coconut, mix.
