Buttermilk Gravy using Ash Gourd and Curd. This is a famous and an important gravy for lunch in hotels, mostly in South India.
Ingredients:
Chopped Ash Gourd – 1 cup
Rice – 1 spoon
Bengal Gram – 1 spoon
Tur dal – 1 spoon
Jeera – 1 spoon
Coriander seeds – 1 spoon
Turmeric powder – little
Grated coconut – 4 to 5 Tbspn.
red chilies – 4
green chilies – 4
Coconut oil – 2 spoon
Curd – 200 ml
Steps:
Soak the Rice, Tur Dal, Bengal gram, jeera and coriander seeds.
Cook the Ash gourd pieces for 4,5 minutes with water adding little turmeric powder.
Grind 4 tbspn grated coconut with 4 green chilies, 2 red chilies, coriander leaves and soaked ingredients. Now add the fine paste to the cooked ash gourd, and adjust the consistency by adding little water. Add required amount of salt.
Whip the curd in a mixie. Once the gravy Boiled for 2 minutes, switch off the stove and add the whipped curd.
On the other side heat the oil and saute mustards seeds, red chilies and curry leaves, then add it to the gravy and mix well. The delicious More Kulambu is ready.
