Rice flour is mixed with hot milk, made as a balls and cooked in milk, added sugar, cardamon powder, saffron and some thick Coconut milk.
Pall Kolukatai is a special Kolukatai, especially made in Chetinadu. Kolukatai is normally steam cooked, but here it is cooked in milk,.. Gives a fantastic taste.
Here I am showing how to cook quickly using a pressure cooker. This is suitable for Vinayaka Chaturthi Pooja.
This measures gives 30 small size Kollukatai.. Which will be enough for 2 to 3 persons.
Raw rice flour or Kolukatai flour – 1 cup (100 gm)
Boiled milk – 2,1/2 cup
Sugar – 3/4 cup
Coconut – 5 tbs ( Grind with water and take thick Coconut milk 1 cup)
Use the same cup for all measures.
Cardamon powder, salt, saffron, ghee.
Dry roast the flour for a minute, the color should not change. If you use Kolukatai flour, you no need to roast.Take 2 tsp of flour and keep aside.
Mix a pinch of salt and add very hot milk 1,1/4 cup, mix with spoon. After few minutes, mix with hand and make a soft, sticky dove, as shown. If you want you can little more hot milk to get the consistency.
Grease your hand with little Ghee and make small balls, without any cracks. You can do around 30.
In rest of the milk add a glass of water and allow it to boil in a cooker. While it is boiling, add the balls slowly one by one.
Cook for 2 whistles. Once steam gets down open and mix gently., so it will not break. Mix the rice flour with 1/4 cup of water, add it and cook for one boil. Add sugar and cook for 2 minutes.
Add 1/4 tsp cardamon powder, a pinch of saffron, add Coconut milk, mix well and switch off.
