Normally we make sweet Pongal using jaggery. For this Pongal we can try a different Pongal using palm candy.
Raw rice – 100 Gm (1 cup)
Palm Candy – 1,1/2 cup to 2 cups
Water – 3 cups
Coconut – 3tbs ( take coconut milk – 1 cup)
Use the same cup for all measures.
Ghee, cardamom powder, cashews, dry grapes.
Wash and soak rice for 30 minutes. Cook the rice with 3 cups of water for 5 whistles.
Mash the cooked rice, add coconut milk and mix. Boil palm sugar along 1/2 cup of water until it melts. Filter it in the Pongal and mix.
Check the consistency and if needed add some water and cook for 2,3 minutes. Add cardamom powder, 2 tbs of ghee.
In one tsp of ghee fry cashews, dry grapes and add It to the Pongal.
