Boli or Obbattu is a traditional sweet specialy made for Tamil, Telugu new year occasions. Normally the outside layer is made using maida., but here we will see how to make using wheat flour.
Bengal Gram Dhal – 1/2 cup
Jaggery – 1 cup
Wheat flour – 1,1/2 cup to 2 cup.
Gingerly oil, ghee, cardamom powder, salt, turmeric powder, coconut.
Mix 1/4 tsp of turmeric powder and 1/4 tsp salt in wheat flour. Add water and make it as a smooth dove as shown. Put 2 tbs gingerly oil, close and let it be for 1 hour.
Wash and soak dhal for 30 minutes. Cook with little water for 5 whistles. Drain the water and grind it without water.
Add 1/4 cup water to jaggery and boil it, until it melts. Stain the jaggery water to the grinded dhal.
Mix well and cook it for 2,3 minutes. Add 1/8 tsp cardamom powder, 1 tbs coconut and mix. Keep aside, let it cool.
Take a lemon size dove, put some oil and flaten it to a thick circle. Do this in a plastic sheet or banana leaf, so that it will not stick.
Make the circle thick in centre and thin around. Keep the dhal Poornam in the center and close it as shown. Again dip in oil and flaten it using fingers gently.
Fold the sheet and take out as shown, and put in a tawa. Cook both sides by adding little ghee.
Now healthy, tasty wheat paruppu boli is ready.
