Kootu is a famous South Indian recipe, made by vegetable, dhal and coconut. It will be nice for rice, chappathi poori, wheat dosa, ragi dosa.
Ingredients
Moong dhal – 1/4 cup (5 tbs)
Channa gram dhal – 2 tbs
Ridge Gourd – 1/2 kg
Coconut – 3 tbs
Red chilly – 4
Oil, mustard seeds, jeera, hing, curry, Coriander leaves, turmeric powder, salt.
Steps
Dry roast moong dhal for 2 minutes. Wash and soak moong dhal and gram dhal for 20 minutes.
Cook dhals along with little turmeric powder and castor oil in 2 cups of water for 2 whistles.
Grind coconut along 3 red chilly and 1 tsp of jeera to a fine paste.
Chop Ridge Gourd as shown, add it to the cooked dhal. Add little water and salt. Cook for 1 whistle. After 2 minutes remove steam and open.
Add coconut paste and cook it for 2 minutes. In 2 tsp of oil fry little mustard seeds, jeera, hing, red chilly and curry leaves. Add it to the kottu, add Coriander leaves, mix well and switch off.
