Raw Mango Sambar is a traditional South Indian dish, especially in Tamilnadu. This sambar is made using Raw Mango and Tur Dal pulp added with home made sambar powder.
Ingredients:
Raw Mango – 1 cup (cut into pieces)
Tur Dal – 1 cup (cooked with turmeric powder and mashed to pulp)
Tamarind – An Amla size
Small Onion – 15 to 20
Tomato – 1/2
green chilies – 3
Only Red chilly powder – 1 spoon
Home made Sambar powder – 1 and a half spoon
Mustard seeds – 1 tspn
Asafoetida – 2 pinch
Curry leaves
Oil for sauteing
Salt to taste
Steps:
First heat the pan with little oil and add the green chilies and small onions. Saute them for a minute. Then add the tomato and stir well. Then add Raw mango pieces and saute it for 2 minutes. Then add 1 spoon red chilly powder. Later add the tamarind pulp. Allow it to boil for 4 mins by simply closing the lid. After 4 mins add the tur dal pulp and then add the Sambar powder. If required add water to get the right consistency. On the other side heat the saute pan with 1 spoon oil and add mustard seeds and asafoetida. Once th mustard pops add the curry leaves and add it to the sambar. Add coriander leaves and mix well. The aromatic Mangai Sambar is ready.
