Bangalore Tomato – 1 kg
Coriander seeds – 2 tbs
Red chilly – 15
Pepper – 1/2 tsp
Jeera – 1/2 tsp
Methi seeds – 1/4 tsp
Gingerly oil – 6 to 8 tbs
Jaggery – 2 to 4 tbs ( optional)
Salt, turmeric powder, hing,mustard seeds, curry leaves.
Boil 2 liter water, add tomatoes and close, keep aside for 30 minutes.
Peel the skin of tomatoes, add 1/4 tsp turmeric powder, and grind it in mixi, without adding water.
Dry roast Coriander seeds, pepper, jeera, methi seeds, red chilly and powder it.
In 6 tbs of gingerly oil fry 1 tbs mustard seeds, hing, curry leaves and add grinded tomatoes. Cook in high flame for 10 minutes.
Add grinded powder, salt and again cook for 15 minutes in medium flame.
Add jaggery, 2 tsp of gingerly oil and switch off. Let it cool. Store in dry container. You can keep this outside for 4,5 days, and in fridge for 2 weeks.
This will be nice side dish for idly dosa, Bread, chappathi and curd rice. Apt for traveling.
