Foxtail Millet in Tamil known as Thinai , is very rich in fiber and has low carbohydrate. Making a curd rice using thinai will be a good choice for summer.
Thinai – 100 Gm ( 1 small cup)
Water – 3 and 1/2 cup ( use same cup for measuring)
Fresh curd – 250 ml
Salt, small onions, cucumber.
Wash and soak thinai for 3 hours, cook along with water for 4,5 whistles.
Open and let it be aside for 15 minutes, until it becomes warm. Add curd, salt and mix well.
If you are doing before 3,4 hours before eating, you can mix 3/4 cup milk and 1/4 cup curd.
Chop 4 small onions finely. Chop 3 tbs of cucumber. Add them to the curd rice, so it will be tasty and also onion and cucumber gives cooling for body.
Try this healthy millet curd rice and enjoy.
