Kodo Millet in Tamil known as Varagu Arsi is a healthy millet. It contains fiber. It has less carbohydrate than normal rice and wheat. It also has calcium. Let us see how to cook sweet pongal using Kodo Millet and jaggery.
Kodo Millet – 100 Gm (1 cup)
Moong dhal – 1/4 cup
Jaggery – 1,1/2 cup to 2 cups
Water – 4 cup
Use the same cup for all measures.
Cardamom powder, ghee, cashews, dry grapes.
Dry roast moong dhal. Wash the Millet and Dhal and soak for 30 minutes.
In 4 cups of water add soaked Millet and Dhal, and cook for 4 whistles.
Wait until steam down. Open and mash it when it is hot. In 1/4 cup of water melt jaggery along 1 tsp of ghee and filter it in Pongal. Mix well. If it is thick add some water and make the consistency loss.
Cook it open for 2,3 minutes. Add cardamom powder, 2 tbs of ghee and switch off. Fry cashew and dry grapes in ghee and add it to the Pongal.
