Curd rice is a good choice for all time, especially for summer. Here we make it more healthy, by doing it using Kodo Millet, in Tamil known as Varagu, which is very rich in fiber and low carbohydrate.
Ingredients
Kodo Millet – 1 cup (100 Gm)
Fresh curd – 250 ml
Water – 4 cups
Graded carrot – 1 tbs
Finely chopped raw mango – 2 tbs
Green chilly – 1
Ginger – 1/2 “inch
Oil, salt, hing, mustard seeds, jeera, ulund dhal, gram dhal, curry leaves.
Steps
Wash and soak Varagu for 2,3 hours. Cook it in 4 cups of water for 4,5 whistles.
In 1 tsp of oil fry mustard seeds, ulund, gram dhal, jeera, hing, curry leaves, ginger, green chilly, carrot, raw mango for a minute.
Add it to the cooked Varagu, add salt and let it cool. Once it becomes warm add curd and give a good mix.
( if you are doing 4,5 hours before eating you can mix 3/4 cup milk and 1/4 cup curd., so it will set correctly after 3,4 hours)
Now Creamy, healthy cool Varagu Curd Rice is ready.
