Kodo Millet in Tamil known as Varagu can be used instead of rice. It is rich in fiber and low in carbohydrate. So it will suitable for diabetic people. We can use very less oil, ghee for this Varagu recipes. It tastes as rice.
Kodo Millet – 1 cup ( around 250 Gm)
Use the same cup for all measurements.
Thour dhal – 1/4 cup
Moong dhal – 2 tbs
Tamarind – Amla size
Small onions – 8
Tomato – 1
Vegetables – 4 or 5 varieties according to your choice, I do with,
Brinjal – 2
Drumstick – 1
Green peas – 4 tbs
Broad beans – 4 tbs
Carrot – 2 tbs
Beans – 2 tbs.
Sambar powder – 3 tsp
Rasam powder – 1 tsp
Coconut – 1 tsp
Gingerly oil, ghee, turmeric powder, castor oil, salt, mustard seeds, hing, curry leaves.
Wash and soak Varagu for 2,3 hours. Dry roast moong dhal and soak thour and moong dhal for 15 minutes. Take out pulp from tamarind. Grind coconut and rasam powder without water.
In a cooker boil 1 glass of water, add dhal, turmeric powder, castor oil and let it boil.
In other burner, keep a Kadai and add 2 tsp of gingerly oil, fry onions, tomato, all vegetables, add Sambar powder, tamarind pulp and allow it to one boil.
Add all this to the cooker, add 4 glass of water and allow it to boil. Add Varagu, salt and coconut powder, mix well and cook for 3 whistles.
Wait until steam downs. Open, mix gently, in 1 tsp of gingerly oil fry mustard seeds, hing, curry leaves and add it. Add 1 tsp of ghee over it.
Hot Creamy Varagu Sambar Satham is ready.
