Normally we do idly dosa using rice and ulund dhal. This fenugreek idly dosa batter is made by using rice and fenugreek seeds. Fenugreek seeds are very good for health, it has more fiber and improves digestion,good cholesterol, mother feeding, controls sugar, good for hair, skin. It cools down the body.
Idly rice – 1/2 kg
Fenugreek seeds – 2 tsp
Castor oil seeds – 8
Wash and soak Vendayam over night. Wash and soak rice for 2 hours. Break the castor oil seeds as shown and take only the white seeds inside.
Grind vendhayam and seeds for 3,4 minutes, until it becomes Puffy. Grind rice little course. Add altogether and mix salt, mix the batter using hand and keep aside for 12 hours.
Now it will ferment well. Mix well add 2 pinch of cooking soda and mix. Adjust the consistency by adding little water. Batter should be little watery as shown.
Allow the idly pot to be hot. Make idly as shown.
Make thick dosa, add gingerly oil, close and cook in low flame to get a soft dosa with lots of holes over it.
This vendhaya Idly dosa will be nice along with coconut chutney, tomato chutney, tomato Kuruma. It will be very nice along non vegetarian dishes like Mutton, chicken, fish kulambu.
